Michel Escoffier and Triumph Higher Education Launch “the Next Generation” of Culinary Education
On October 12, a reception with Michel Escoffier, great grandson of culinary icon Auguste Escoffier and president of the Auguste Escoffier Foundation and Museum in France, offered history and little‐known family anecdotes about his great grandfather, as Chicago chefs, dignitaries and other guests were treated to champagne and hors d’oeuvres in celebration of the historic affiliation of Escoffier and Triumph Higher Education (Triumph HEG) to launch the Auguste Escoffier Schools of Culinary Arts.

In April 2010, The Auguste Escoffier Foundation and Museum in France, along with Michel Escoffier, its president and the great grandson of Auguste Escoffier, joined forces with Triumph Higher Education Group to create an exciting affiliation through which Triumph will launch the Auguste Escoffier Schools of Culinary Arts in the United States and internationally. The Culinary Academy of Austin in Texas and the Culinary School of the Rockies in Boulder, Colo., in June and July 2010. Building on the success of these boutique culinary schools and pending necessary regulatory approvals, Triumph plans to transition them to the Auguste Escoffier Schools of Culinary Arts. The company is actively looking for additional school locations in other cities throughout the United States, including Chicago.
Offering programs for the culinary and pastry-arts professionals as well as the home cook and culinary enthusiast, the Auguste Escoffier Schools of Culinary Arts aim to be the next generation of culinary education. Professional programs for culinary and baking will offer a demanding, accelerated program focused exclusively on classical culinary training and mastery of the skills and techniques sought by employers. Programs will combine online interactive delivery with hands-on practice, world-class instructors, farm-to-table sustainable cuisine, and affordable tuition.
The Auguste Escoffier Foundation was founded in 1966 by Joseph Donen and other friends and colleagues who had worked with Escoffier in London at the Savoy and Carlton Hotels. Dedicated to perpetuating the memory and great achievements of Escoffier, the Foundation houses the Museum of Culinary Arts, and among other activities provides workshops that develop the culinary knowledge and expertise of chefs across the world.
Led by Escoffier’s great grandson, Michel Escoffier, the Foundation and Museum are open to the public and are located in the actual home where Escoffier was born, in the heart of the old village of Villeneuve‐Loubet, near Nice, France (www.fondationescoffier.org/escoffier).
