Sustainable Seafood
 
Objectives: By the end of this session, attendees to this professional development event will: 1) Discover the importance of utilizing sustainable seafood in their classrooms and places of employment for the benefit of the local and global ecosystem. 2) Prepare, evaluate, and critique dishes made from local, sustainable sources and their by-products in a lab environment. 3) Acquire knowledge on the ecological benefits of oysters and how we should utilize them.

OUR NOVEMBER 5TH TASTE OF CAFÉ LINE UP
 
November 5th, hosted by Johnson & Wales University in Providence, Rhode Island.
 
Food Recovery: From Waste to Wow!
 
Objectives: Participants completing the program will be able to 1) assess the impact of food waste on operations and budget (in educational or production setting); 2) identify and incorporate management strategies for mitigating waste and 3) design and produce high-quality food and beverage items from would-be food waste.

Doing a Deep Dive into Umami: Unlocking the culinary power of our fifth taste. 
 
Objectives: By the end of this session, participants will be able to: 1) Explain the science and history of umami. 2) Explain MSG from a science, health, and utilization standpoint. 3) Recognize the taste of umami. 4) Practice cooking with umami to elevate overall flavor using umami-rich foods and MSG.

Classic Cakes and Tortes
 
Objectives: Participants completing the program will be able to 1) Understand current plating techniques and trends in fine dining establishments. 2) Learn how to change familiar and classic items into multiple components while still keeping the classic flavor profile. 3) Gain a better understanding of the execution of basic pastry techniques as used in commercial establishments.
