Lamb Fabricating 11 8 21D.E.A.L. (Deal for Education and Learning) of the Week

The American Lamb Board’s new Fabricating American Lamb booklet includes step-by-step directions for fabricating a lamb shoulder, Frenching a rack of American Lamb, creating a BRT American Lamb Leg Roast and fabricating a leg of lamb. Elegant Chocolates Made Easy
 
Instructor: Chef Scott Twichell, CEPC and Pastry Chef Instructor
 
Objectives: Participants completing the program will be able to 1) Demonstrate processes and techniques in creating chocolates. 2) Successfully temper 3 different types of chocolate couverture. 3) Demonstrate an understanding of the use and care for the tools and equipment used in chocolate shops. 4) Operate different types of chocolate equipment to produce consistent and profitable chocolate candies.

Doing a Deep Dive into Umami: Unlocking the culinary power of our fifth taste.

Objectives: Participants completing the program will be able to 1) Explain the science and history of umami. 2) Explain MSG from a science, health, and utilization standpoint. 3) Recognize the taste of umami. 4) Practice cooking with umami to elevate overall flavor using umami-rich foods and MSG.
