CAFÉ Update March 7, 2022

07 March 2022
A PANEL DISCUSSION
During the Deans and Directors Retreat on June 22, 2022, there will be an afternoon panel discussion led by Dr. Jonathan Deutsch from Drexel University.Jon1web fe

Culture in the Kitchen Classroom: The Role of the Culinary Educator

We serve students of diverse identities. Food is fraught, emotional, loaded and tied to systems of oppression, power and profit. We can't talk about food without talking about the oppression of people, past and present, who have sweated to get it to us. Culinary educators often grapple with how to deal with these issues--where does our obligation to teach skills end and our obligation to teach history, sociology and civics begin? Can culinary technique be taught without this context? Should it be?

We need to be open about these issues--not to reach consensus, but to seek to understand and better our industry and prepare our students for what's to come.

This panel of experienced educators will discuss their experiences, lessons, and strategies for engaging with these topics and teaching so much more than how to cook.

To sign up for the Deans and Directors Retreat, go to CAFE-Events for a full day devoted to challenges and opportunities to lead our team into the Future of Foodservice.
