Unilever Foodsolutions Winner: Alexandra Zeitz

08 August 2016
  • Food Lab Manager, Drexel University’s Problem Solving and Research Center in the Center for Hospitality and Sport Management, Philadelphia, PA
  • Zeitz won $1,000 and a complimentary CAFÉ Leadership Conference registration

This Unilever Foodsolutions award is part of their outreach in a “Seductive Nutrition Challenge” to remake familiar dishes to be more calorie/health conscious.

Alexandra Zeitz re-engineered a familiar comfort food dish - Country Ham with Red Eye Gravy and Grits. She changed both its use of products as well as the dish’s method of preparation. The goal was to produce a more healthful and seductive menu item.

She won for her dish County King Trumpet Mushrooms with Lipton and Knorr Red Eye Gravy and Cauliflower Grits.

The original dish contained 470 calories and 28 grams of fat per serving while the re-engineered dish came in at 257 calories with 15 grams of fat in each serving.
